The M1 Mac (with 16GB RAM) can stitch panorama's faster than the intel BUT can result in freezes and "beachballs" as a result of too much memory pressure (not shown in the video above)- when I tested this it was using a whopping 20GB of RAM compared to 4GB on the intel after the panorama stitching!.

Compared to the Intel Mac, both Mac's use up way more RAM (like tenfold) on LR compared to the intel.

Performance difference between 8 and 16GB M1's Mac's are present, but not too much- however, LR uses double the RAM on the 16GB model for the exact same tasks and still uses lots of "swap memory".

Seeing that I have time to return one and sell my old Mac, I did a quick comparisons with a fresh install of LR on all three of them in a new catalog with the same batch of pictures:
